Hospitality Industry Safety Issues: Top Restaurant Review Website Posts “City Health Inspection Scores” Online; Consumers Can Now More Easily View Inspection Background And History

Yelp.com is starting to make it easier for diners to find a place to eat without getting sick.In August, Louisville became the second city to incorporate health-inspection information into its restaurant pages on the user-review site. San Francisco — Yelp’s home turf — was the first to do so back in January. Now, listed among a restaurant’s business attributes (hours, parking, Wi-Fi access, etc.) is its health score out of 100 possible points and a link to a description of  violations and previous inspections.

The new feature is “empowering the public with information,” says Kathy Harrison, communications director for the Louisville Metro Department for Public Health and Wellness.

The response to the addition of health scores has been “overwhelmingly positive,” Lowe says, and Yelp is currently working with a half-dozen other cities to bring health scores to their restaurant pages over the next several months.

Hospitality Industry Health Risks: Studies Show Restaurants Use Cheaper Fish And Mislabel As Red Snapper And White Tuna; Cheaper Fish Substitutes Are Higher Risks For Food Poisoning

In addition to permitting aquaculture operations to use drugs that are banned by other countries, and permits the sale of species that other countries don’t, the U.S. only minimally oversees imports. A Johns Hopkins study FDA food inspectionsshows that the U.S. inspects a miniscule 2 percent of the seafood that comes into the country. By comparison, Japan inspects 18 percent and the European Union inspects 50 percent.

If you’re a fish eater and you keep an eye on the news, you already know that the “red snapper” special at your local restaurant is probably mislabeled. For years, restaurants have been substituting cheaper, more common species like tilapia for the famed red snapper. Last year, however, DNA analyses showed that the problem is more widespread than anyone suspected: In Los Angeles, New York, New Jersey and Connecticut, studies showed that 100 percent of restaurants were serving cheaper fish and mislabeling them as red snapper. Similarly, white tuna, yellowtail, Dover sole and wild-caught salmon were also often substituted for other species.

Most of the time, price gouging is the only harm that comes from such mislabeling. Sometimes, however, the danger might be a bit higher. Recently, the U.S. Pharmacopeial Convention noted that much of the alleged “white tuna” served in sushi restaurants may actually be escolar, also known as “snake mackerel.” A cheap fish that may cause severe food poisoning with, shall we say, explosive results, escolar is banned in some countries.

Hospitality Industry Food Safety: "Top Restaurant In America" Fails Inspection By Chicago's "Food Protection Division"; Results Posted On New "Online Reporting System"

“…the most common infraction is improper food temperatures…what’s important is how quickly they are corrected…”

Beginning this November the City of Chicago made it easy for residents to check in on the health and safety record of their favorite restaurants with a robust and detailed web site. At the end of November a surprising entry showed up on the city’s newly launched site: the Michelin-starred Alinea restaurant failed a November 30 inspection.(Full disclosure, their four violations were immediately corrected.)

Alinea is often referred to as the best restaurant in America, and its chef, Grant Achatz, draws rock star acclaim for his culinary inventiveness.

But it’s not immune to heatlh department inspections. According to the report on Cityofchicago.org, Alinea was less than stellar on its food safety to close the month of November. No one from Alinea was available for comment by press time.

  • Inspectors observed black mold growing on interior surfaces of the ice machine.
  • Inspectors observed employees failing to properly wash hands.
  • Inspectors observed hazardous food storage of purple cabbage and potato soup.

 All of the items in the November 30 report were corrected immediately, according to Public Health Commissioner Bechara Choucair.

That’s the benefit of the new city website, however. In the past, restaurants who failed inspection were listed on a pass/fail basis. The new web site allows users to dive into information and find out exactly what violations face the restaurant.

Hospitality Industry Health Risks: Kentucky Hotels "Annual Inspection Reports" Are Now Posted "Online" With Scores And Violations Easily Accessed

Scores from annual inspections of more than 70 Northern Kentucky hotels and motels can now be found online.

Information on the inspection process, along with the scores, can be viewed on the Northern Kentucky Health Department’s website.

Hospitality Industry Pool Illness Risks: Budget Deficits Risk Shutdown Of State-Run "Public Pool And Spa Inspection Programs" Putting Guests At Risk And Raising Insurance Premiums

The lone state inspector, Tim Wilson, also reviews construction plans and educating operators, builders and others in the industry on the federal law, intended to prevent injury and death from improperly installed drains.

“…South Carolina considered shutting down its program several years ago because of budget problems, but the hotel and motel industry pushed to keep it to avoid increased insurance costs…The state implemented fees to support the program..”

Resort owner Peter Spanos doesn’t support big government regulations but fears a proposal to eliminate New Hampshire’s public pool and spa inspection program will mean more pool-related illnesses in a state that receives 34 million visits annually. Spanos, owner of the Shalimar Resort on Lake Winnisquam in Tilton, said that wouldn’t be good for New Hampshire’s image or his business.

The House budget cut would save $139,000. Environmental Services Commissioner Thomas Burack said without the program, people would be at greater risk of gastric illnesses and lung, skin and eye infections. New Hampshire appears to be unique in using this budget-cutting measure, and some question whether it would tarnish the state’s reputation and hurt its $4 billion tourism industry.

New Hampshire inspects nearly 1,400 public pools and spas. In the last five years, the state reported 2,211 water quality violations; 313 bacterial and 725 safety, with 224 immediate closures. Manchester, Nashua, Bedford and Merrimack do their own inspections.

Hospitality Industry Guest Privacy: Hotel Management Must Standardize Privacy Procedures For Entering, Cleaning And Inspecting Guest Rooms

“If someone has a couple of articles of clothes on the bed we will move them to make the bed…if they have expensive things on the bed – purses, electronics, cameras – we will not touch that bed.”

While every chain hotel has a set corporate policy, each individual hotel may be less stringent and abiding for the guest’s benefit.

“According to Iowa law, we can enter a room anytime we want,” Jepsen said. Generally, hotel staff won’t enter a room if they don’t suspect something may be wrong in the room, Jepsen said. With extended-stay guests, who are staying 30-40 days, they are required to enter the room a minimum of twice a week. They mainly change the sheets and make sure garbage isn’t piling up, but also they make sure their equipment isn’t damaged. By the end of 30 days, a mattress could be ruined or the guest could be smoking in the room, Jepsen said.

There are other reasons for entering a guest’s room. “There have been instances where guests put their ‘do not disturb’ sign up but they may have a medical issue,” said King. “It could go unnoticed for long periods of time.”

“In the back of our mind, we always know what our rights are and what the rights of our guests are,” she said. “You can’t always have rules written in stone.”

Protection exists for both the hotel and the guests. Country Inn & Suites and AmericInn, like most hotels, have video surveillance systems. Both also keep a log on what keys have been used on the room’s electronic doors.

With any serious crime, such as theft, the police are immediately contacted, Jepsen said. “If a guest reports a theft, it’s investigated to its fullest extent,” she said. This is also done because the hotels’ insurance providers require police statements for incidents.

“What I always do is I have everyone write a written statement and sign and date it,” Jepsen said.

Restaurant Food Safety: Some Counties Are Now Posting Restaurant Inspections Online With Explanation Of Findings

Most food establishments don’t publicize even their most positive inspection reports, and no government in the Philadelphia region requires that they be tacked up for easy viewing like a menu.

But more are going online. With the new Camden County database that went live Thursday night, the outcome of inspections are now posted for the vast majority of restaurants in the eight-county region.

(From a Philly.com article)   Philadelphia and Bucks, Montgomery and Camden Counties post the actual inspection reports – complete with comments and compliance for dozens of categories – in searchable databases that often contain previous inspections and explanations of the findings.

“Who doesn’t want to know what their children’s cafeteria looks like?” said Carmen G. Rodriguez, the freeholder liaison to the Health Department in Camden County, whose new Web site, like those in the other counties, includes schools.

Still, interpreting the regulatory language of inspection reports for what patrons really want to ask – Is this a safe place to eat? – takes time and patience.

“Cross-contamination and hand-washing violations and temperatures,” thorough cooking, hot foods kept hot and cold foods kept cold – these are the most important risk factors for food-borne illness, said Ben Chapman, a food-safety specialist at North Carolina State University. Dirty bathrooms matter less.
